Yam Porridge
The yam porridge can also be called Asaro its widely eaten by the Yorubas in Nigeria, it is mainly yam cooked with ingredients and the resulting dish contains some soupy liquid.and some people add vegetables to it why some don't!
Ingredients
1 kg white yam
Red palm Oil (to make it look like a soup)
1 smoked fish (Titus/mackerel) / dry fish
1 tablespoon grounded crayfish
medium onion
Fresh green vegetable (i use spinach but its not important)
Habanero or Chilli Pepper & Salt – to taste
2 big stock cubes (to season)
(P.S yam must be peeled before cooking )
Direction
pour enough water to cover the yam cubes and start cooking at medium to high heat.
If you are using dry fish, add it now. When the yams have got a good boil, add the onions, ground crayfish, pepper, stock cubes, palm oil and the smoked fish.
Cover the pot and continue cooking till the yam is done.
Add salt to taste and stir very well. Cook at high heat for about 5 minutes. Add the green vegetable, stir and leave to stand for about 5 minutes then serve.
Fried Yam
Fried yam is simply just like we prepare our french fries , with deep frying you are good to go,it is fried in such a way that the outside of the chips is crunchy while the inside is moist.
Ingredient
Yam
Vegetable oil
Salt to taste
Frying Direction
Heat your oil to 170°C
Peel the yam and slice it to your taste, it depends on the shape or size you want
After peeling put it in water and add salt to it for taste
If you are using a deep fryer you will know when its ready
If your are using a cooker/stove its is ready when the color changes
PS the color must look like golden color before you can get the crunchy taste enjoy!
Note you can eat it with sauce, fried plantain,bean cake (akara) or anything you feel like
